Healthy receipt: cabbage-ham cold salad

I felt like eating something crunchy, but I knew potato chips were a no-go area. I eat them occasionally, but tonight was not the occasion.

So after thinking about some healthier swap and checking what is available in the fridge 😀I came up with this meal and it tasted surprisingly good. This will be one of my meals to go to. I surprised myself. A healthy receipt that is also quick.

Ingredients:

200 g white cabbage
1 small onion
3 carrots
200 g of ham – in dice or cut finely
1 white yogurt
Salt, pepper

Preparation:

Shred cabbage finely.
Peel carrots and shred it coarsely.
Peel onion and shred it finely – you can leave this out if you don’t like raw onion. It gives the meal a little spicy taste. I sliced it very thin with a veggie peeler.

Put the shredded cabbage in a recipient and put 2 spoons of salt.
Mix it well and let it sit for about half an hour.
It will start losing water.
Squeeze it for a while until it starts to be half bland.
At the end squeeze all the excess water from the cabbage.

Get the bowl where you will mix it all.
Put the shredded carrots, shredded onion, and white yogurt.
Add the squeezed carrots and shredded ham.

Add pepper to taste and mix well.
Leave in the fridge for an hour to cool.

Serve in bowls and enjoy.

It is fresh, and healthy, with lots of vegetables, aka vitamins and minerals, and protein. I was thinking about adding mayo at first but it would ruin it. The white yogurt works the same and has minimum calories. And what is the best part, it is loaded with fiber. That is something we need to eat a lot (the bowel movement, you know).

Next time I am thinking about adding walnuts and a green apple. It could work great. And if you want to make it more visually appealing, use red cabbage.

This might be a good idea as a lunch to work.
